  1. Preheat your grill to medium heat or preheat your oven to 275°F (135°C)
  2. Prepare the pork ribs by removing the membrane from the back of the racks. This helps tenderize the meat and allows the flavors to penetrate better. Season the ribs with salt and black pepper on both sides.
  3. In a small bowl, combine the smoked paprika, garlic powder, onion powder, chili powder, and brown sugar to make a dry rub. Sprinkle the dry rub over the ribs, massaging it into the meat to ensure even coating.
  4. If grilling: Place the seasoned ribs on the preheated grill and cook them over indirect heat for about 2 hours, turning occasionally. You can also add wood chips for a smoky flavor. Keep the grill covered as much as possible to retain the heat.
    If using the oven: Place the seasoned ribs on a baking sheet lined with foil. Cover the ribs tightly with foil and roast them in the preheated oven for 2 hours.
  5. After the initial cooking time, remove the ribs from the grill or oven. Brush the barbecue sauce generously over both sides of the ribs.
  6. If grilling: Return the sauced ribs to the grill and cook them for an additional 30 minutes, turning and basting with more sauce every 10 minutes. This will create a sticky and caramelized coating on the ribs.
    If using the oven: Increase the oven temperature to 400°F (200°C). Place the sauced ribs back in the oven, uncovered, and cook for an additional 30 minutes, basting with more sauce halfway through.
  7. Once cooked, remove the ribs from the grill or oven and let them rest for a few minutes. This allows the juices to redistribute and the meat to become more tender.
  8. Slice the ribs between the bones and serve them hot, with extra barbecue sauce on the side. They go well with coleslaw, cornbread, or grilled vegetables.
